I was traveling this last week and the temperatures were in the high 90s. I’m not acclimated for such a heat wave since I live in the mountains where you can almost always find a cool place to be. This spike in temperature had me craving cold fresh foods, here are a few perfect recipes for these last hot summer days! They are also great for using the summer harvest. Yummm.
Chickpea of the Sea from The Kitchn | This is a great alternative to the standard tuna or chicken salad. It uses chickpeas which are both economical and delicious. What a great fresh recipe to have on hand for those moments of starvation!
Pico de Gallo from The Kitchn | We had a ton of tomatoes in our CSA box this week that desperately needed to be processed. We whipped up a double batch of this Pico de Gallo and have used it to top eggs, quinoa bowls, and tacos. So yummy and refreshing.

Watermelon Salad from Taste of Home | This is one of my all time favorite recipes. The taste of mint and watermelon together seems like a match made in heaven, you gotta try it!
