Now, I don’t follow a specific diet but I’ve been known to dabble in all of them. As a family we haven’t eliminated an entire food group with the exception of trying to figure out if any had an effect on my little milk monster man. We try to limit our intake of certain foods but haven’t cut anything out completely.
With that said, I was looking for some pancakes that would come close to nourishing us and I came across this recipe from Nom Nom Paleo. It was simply amazing and my husband has declared these his most favorite pancakes EVER! For those of you that need to stay away from a food group for sensitivities or for personal preference these will probably fit the bill. They don’t use any processed sweeteners, no gluten and no dairy. They whip up in a flash and you can double the recipe for those super hungry mornings! Mmmmm.
Splash them with some maple syrup and sprinkle on a little coconut. I like to supplement my pancakes with this delicious smoothie recipe to get some veggies in. Follow the links to the products that I love the most. When you put high quality ingredients in, you can really feel it.
1 organic banana
1 tbsp chia seeds
1 tbsp raw cocoa
2 tbsp full fat coconut milk
1 extra large handful of spinach
1.5 cups of almond milk
1/2 cup of organic blueberries
Combine in a blender crank it up to the liquify setting. Let it spin for a bit. ENJOY!
With anything you can do just about any variation of this smoothie. When we get low on these ingredients I will make it with just about anything we have in the cupboard. I add the coconut milk because I am nursing and thrive with a little extra fat intake!
